I have been making this recipe for about 30 years and only today found it online. It is one of the best recipes I have ever made. I recently doubled the butter mixture and put some under the skin and on top of the skin and it made this even better.

What temperature should the breast be to be considered done?

We used this for Thanksgiving and it came out very well. Tasted delicious and fairly easy. I also added turkey thighs which were great w/ this recipe. Recommend: at very end, open foil & broil for a few minutes if you want the skin a little crispy.
