Greek Grilled Chicken with Tomato-Cucumber
. Prep Time: approx.  30 Minutes. Cook Time: approx. 15 Minutes. Ready in: approx. 45 minutes .
Makes servings.

1/2 teaspoon ground black pepper



Chicken and Salad

1 package Foster Farms Fresh & Natural skinless, bonelss chicken breast
1 cup yellow or red bell pepper, diced
1/4 cup red onion, diced
1 cup fresh plum tomatoes, diced
1 cup English cucumber, diced
1/2 cup pitted Kalamata olives, coarsely chopped
1/4 cup feta cheese, crumbled
3 tablespoons lemon juice
3 tablespoons olive oil
1/4 cup flat leaf parsley, chopped
1 teaspoon fresh garlic, minced
1 teaspoon dried oregano
3/4 teaspoon salt

1. In medium bowl, combine lemon juice, olive oil, parsley, garlic, oregano, salt and pepper; whisk to blend. Reserve 2 tablespoons marinade for salad.

2. Tear open chicken pouches and add chicken to marinade remaining in bowl; turn to coat. Cover and marinate in refrigerator for 30 minutes.

3. Grill chicken over medium heat on outdoor grill or stovetop ridged grill pan for 6 minutes per side or until cooked through.

4. Meanwhile, in medium bowl combine all tomato-cucumber salad ingredients with reserved 2 tablespoons marinade. Serve chicken with salad; sprinkle with feta cheese. Garnish with parsley sprigs,if desired.
